Hi Melissa! You can absolutely make those swaps! Corn syrup will work perfectly and you could swap the bourbon for rum or omit it!

When I cut them after several hours in the fridge, the center was still very much liquidy. I was able to salvage most of it but the middle parts were too messy. The taste was good and the crust held up, but maybe the bake time could use some additional minutes. Or maybe the filling needs a thickener?
